1. Saw this article in recent CardMaker Magazine in Readers Reach Out section.

  2. Made Beer Can Chicken last night for dinner....
    Wanted to share this really good recipe.

    Beer Can Chicken


    1 whole roasting chicken, 4 to 5 lbs
       Olive Oil
    3Tablespoons dry spice rub, divided(recipe below)
    1  12 ounce can domestic beer (We used 24 oz can with half poured out and had to put it on floor of grill to be able to close lid.)

    Remove chicken's neck and giblets and rinse the chicken inside and out.
    Pat dry with paper towels.  Coat the chicken lightly with oil and season
    with 2 tablespoons of the dry rub.  Set aside.

    Build a charcoal fire or preheat a gas grill to medium. (We used charcoal.)

    Open the beer can, pour out about 1/4 cup of the beer and make an extra hole in the top of the can with a can opener.  Sprinkle a tablespoon of the fry rub inside the beer can.  Place the beer can in the center of the cooking grate over indirect medium heat and set the chicken on top of the beer can.  The chicken will appear to be sitting on the grate.

    Cover and cook the chicken for 1-1/2 hrs or until the internal temp is 165 in the breast area and 180 in the thigh.  Remove carefully to platter, holding can with tongs.  Remember contents of the beer can will be very hot.  Discard beer and can.  Let chicken rest for 10 mins before carving.

    4 servings

    Classic Barbecue Rub

    3 Tablespoons sugar
    2 Tablespoons paprika
    2 Tablespoons kosher salt
    2 Tablespoons packed brown sugar
    1 teaspoon ground cumin
    1 Tablespoon freshly ground black pepper
    1 Tablespoon onion powder
    1 Tablespoon garlic powder
    1 Tablespoon celery salt
    2 teaspoons chili powder
    1 teaspoon dried oregano
    12 teaspoon cayenne pepper

    Mix all ingredients in medium bowl.  The rub can be stored in an airtight container for up to
    6 months. 
    Makes 1-1/2 cups

  3. Remember these?  Saw this at my local WalMart.  In an effort to decorate my office all in
    BLUE, I've discovered I've had to get a little creative.  Some DIY art.  Only just begun, but
    shaping-up okay.  So fun.  Relaxing.  Always did love coloring...

  5. Getting ready to write a collection of stories about giving, the needy, wonderful stories of hope in humankind  and "gotta tell it- type things" that have happened.  If you have any of these, please pass them on so that they can be included.

    Example:  I run a food bank.  A child came in with his grandmother.  There had been a tense verbal abuse situation earlier that day.  When asked what food the child would want he said, "ham."  Sorry, no ham.  Well, then two days later, someone donated 24 hams, when no one had donated ham in about a year.  I believe that God always provides....just enough.  This was the perfect example.

    Another example:
    When trying to help a family get trash removed from their property, I discovered that the family owed the Triple 7 Sanitation Company $120 to get caught up in their payments.  And another $60 for removing their trash for the next three months until they will be forced to vacate their property.
    Upon speaking to the owner of the company, she erased all the debts and agreed to come every Monday for the next three months and remove their trash FREE. 

    There is so much good out there. 
    Lots of wonderful things happening all the time.
